Mac only: Sparrow, the super-integrated, minimalist Gmail client for Mac, has just updated to include Priority Inbox support, multitouch gestures, IMAP support (so you can take advantage of its minimalist interface with any email service), and even a free trial version.

If you love the idea of a minimalist email client, Sparrow now supports nearly every email service out there in the form of IMAP, while further improving its fantastic Gmail integration by adding Priority Inbox as a view mode. It has also been updated with some handy multitouch gestures for MacBooks, as well as some other small features like contact groups, a formatting bar and better performance.
