In reality they are probably only recording the start and end point of the flight as most people should have their phones turned off or in flight mode and hence not recording all the “inbetween” during the flight locations.
So basically the system is guessing that they must have been on a plane if the recording suddenly stops in London and restarts again in say Rome a few hours later.
Its likely cheating slightly, but nice visuals all the same.
