A few people were outraged by the graphic showing how beef is everywhere. Well, pigs are everywhere too. Christien Meindertsma – author of Pig 05049 – documented a pig’s afterlife. Did you know that pig hair is used in bread?
Spaniards say “from the pig I even like the tail” (which in fact is delicious), but I didn’t know that a single pig from the Netherlands ends in 187 different non-pork products, from low-fat butter – they add pig gelatin for texture and shine – to bullets to human’s heart valve replacements, made of pig’s heart valves and a memory metal net. Having said that, pig hair in bread? WTF?

But I could imagine this being a nightmare for people trying to avoid pork products.

Friday, October 29, 2010 at 1:34 PMmore protein = more gluten
and gluten helps bind the dough together…
better elasticity in the dough…
and helps the bread rise and keep its shape after it has been baked…
